Ernest Lopez

executive Chef

With over 25 years of culinary leadership experience at esteemed luxury hotel properties and restaurants, Chef Lopez brings a wealth of knowledge, passion, and creativity to Sea & Sky. His expertise in crafting innovative, seasonal menus and leading diverse culinary teams, aligns perfectly with Hotel La Jolla’s commitment to providing unforgettable dining experiences that celebrate the flavors of the region.

Chef Lopez joins Hotel La Jolla from Water View Restaurants, where he served as Executive Chef, overseeing multiple outlets, including Edgewater Bar & Grill. Prior to that role, he helmed the kitchen of the Auberge Resorts Collection’s Five Star Mauna Lani and served as Executive Chef at Malibu Farm. He was also a member of the culinary team at Four Seasons Lana’i City, and was part of the opening culinary team at the acclaimed Grand Del Mar resort.

At Sea & Sky, Chef Lopez plans to evolve the existing menu, built on fresh locally sourced ingredients, highlighting the unique coastal flavors of La Jolla. Guests can expect vibrant new dishes and a continued focus on sustainability, seasonality, and exceptional service.

Bradley Chance

Chef de Cuisine

Tapped for his imaginative culinary style, Chef Bradley Chance is taking ocean-to-table dining to new heights. Chef Chance joined Sea & Sky in 2023 as part of the opening culinary team, assisting in the creation and execution of an ever-evolving menu that celebrates the bounty of locally sourced coastal cuisine. 

Chef Chance honed his masterful skills in several high-profile kitchens spanning the east and west coasts of the US. Most recently, he served as Executive Chef at Ember & Rye located in Carlsbad, and was part of the opening team at San Diego’s acclaimed Juniper & Ivy.

Ask Chef Chance what his favorite ingredients are, and he’ll say, “love and shellfish”, both of which provide the perfect complement to Sea & Sky’s ocean-driven concept heavily inspired by the restaurant’s idyllic seaside locale.
